1 cup green lentils
3 eggplants
1 onion
1 red pepper
2 tomatoes
2 cloves of garlic
1 heaping tablespoon of tomato paste
1 tablespoon of sumac
1 tablespoon of dried mint
2 tablespoons of olive oil
Salt, pepper
2 stalks of green onions
1 handful of parsley, fresh mint


First, we boil our green lentils, which is one of the main ingredients of our meal, well. We peel our eggplants so that they are variegated. Then we cut it into slices and leave it in salted water and strain it. We chop our peppers, garlic, onions and throw them in a bowl. We grate our tomatoes into the same bowl, add our spices, add our olive oil, and finally add the green lentils we boiled into this bowl and mix well. We arrange the sliced ​​aubergines at the bottom of the pot and spread our mixture on it. Then we arrange eggplants again and spread our mixture on it again. We put eggplant on the top again and pour 1 glass of water and start cooking. Cook for 1-1.5 hours on medium low heat. We close the bottom and put our finely chopped greens on top. After resting for half an hour in this way, it is ready to eat. You can turn it into a balanced meal by consuming 1 bowl of yogurt alongside 1 plate. Bon Appetit.
